June 04 Traveling to Caracas, hubby and kids on their ownI will be traveling to Caracas on Friday 6 June to be with my mom as she is having eye surgery on the 11th. I will be away until the 18 of June. I wanted to take the kids but, they will have to stay this time, the impact of raising cost of gas has surely caused the airline tickets to get super expensive. It will be interesting to know how they will handle it with out me, how is my husband going to feel and handle it huh, hehehe, I am sure he will do a good job though. My heart skips a beet anytime I think I won’t see them for that long but at the same time I fell happy to see my family in Caracas so soon. To my friends and family here in Nassau, please check on the kids for me, I will truly appreciate that. Love and regards to all. May 17 Our new dog "Mona" / Nuestro perrita nueva "Mona"Hi everyone, may I introduce to you the new member of our family, "Mona", she is half Rotwilder and half Chow. We adopted her from the Bahamas Humane Society http://www.bahamashumanesociety.com/ yesterday May 16 and she is 6 weeks old. She was broth in to the Humane Society with burns on her back apparently from a car muffler and they took good care of her and the hair on her back is now almost grown back. My friend and her kids and us went together and they adopted and cute kitten that they named Princess.

Cuando fue llevada a esa institucion, tenia quemaduras en su espalda y con todo el amor y cuidado que alli le dieron, ya esta mejor y ahora con nosotros tendrá un feliz hogar.
May 14 EXTRA EXTRA, NICK'S BIRTHDAY NEWS - NOTICIAS DE MI CUMPLEAÑOSTonight’s dinner was done in a special way for Nick’s birthday with candles and champagne glasses fill with Sprite, hihihi. He enjoyed it. On Friday he will have his birthday in school sharing cup-cakes and ice-cream with his class-mates. He got a Nintendo DS from us that he wanted so bad, and his cousin Nikkita got him 2 games for it. Saturday we will have his birthday cake from us. So here are some picks.

On May 4 Neil and I will be celebrating our 10th year wedding anniversary, wow, I cannot believe it's been that long, it just does not feel that long. We been through everything, sickness and health, for richer or for poor, in good times and bad times, and I am expecting until death do us apart.

April 29 Preserved OlivesPreserved Olives Today I wanted to share a DELICIOSO dish that I have shared with a few of my friends. This recipe could be stored for weeks and months and used to toss on pastas just adding some extra chunk of cheese and fresh basil, or just put on some on French bread, crackers, pita breads, salads, or you could keep using your imagination. This is perfect for entertainment along with cheese and wine. Enjoy. Ingredients: 1 small bottle of Olives (Keep the same bottle to store this recipe if you prefer) Enough olive oil to fill the bottle that the olives came in 2 Large Red Sweet Peppers 1 large head of garlic Fresh Thyme 1 pinch of Black pepper 1 pinch of salt 1/2 tsp of oregano 1 lemon Preparation: Peel all of the garlic and slice each clove in two Slice the sweet peppers and remove the heart and discard Slice the lemons in circles leaving the skin on Discard the water that comes with the olives and put these in a baking tray along with all of the above, add the rest of the ingredients and toss. Bake at 350º for 30 minutes or until the sweet peppers and garlic are roasted. Transfer to the olive bottle or one of your preference always making sure that the olive oil covers everything in the bottle. Store at room temperature or refrigerate. * To make a big dish as shown in my pick, just do 3 times the amount of this recipe.

March 26 Happy Birthday NikkitaMarch 23 March 2008 / Marzo 2008Hi family and friends, I have posted a new album showing some picks of what I have been up to during this month. We had a great time at my niece in-law Baby-shower. Most of the family got together and that was nice for a change, I just love that family feeling.
The Easter holiday was great and the break? I really needed it. We were on Saturday to the zoo Ardastra Gardens that had Easter activities for the kids. My friend Yiota and her kids were there as well so that made it even greater. Tomorrow will be like Christmas when the kids open their Easter baskets.
I am looking forward to my trip to Caracas, hopefully end of April or in May; I want to give my mom a big hug.
My kids and I been very crafty lately so I am posting below some picks of our weekend Easter project. We re-decorated the guest bathroom. It was yellow before. The kids made the paintings one each and we framed them and the starfish Nick donated it to the project, as he had gotten it from Ardastra Gardens for Easter and it was for his bedroom.
February 20 This is LoveENGLISH: About tow weeks ago my two kids woke up early one Saturday and surprised me with breakfast, toast bread with butter and juice, jijijiji. Along with it came cards made my by each one of them and all of this was a "just because" ocasion. That is Love, don't you agree.

January 02 Christmas in Caracas - Navidades en CaracasOn Friday 4 2008, my family and I will be returning to the Bahamas. These 3 weeks in Caracas was the most amazing time spent, a Christmas with my mother and the rest of my family was just priceless. I am so gratefull to God for helping us get here and I am really really happy. I will have videos to show to my friends when back to Nassau.
